Grilled Salmon with Tahini Dressing
 

This is a quick and easy, super tasty and oh so healthy weekday dinner. The combination of tahini and lemon juice in the dressing add a delicious freshness to this dish that is packed with vitamins and healthy fats.

Serves 1

Ingredients

  • 160g salmon
  • 5 stalks of asparagus, ends trimmed
  • 10 stems of broccolini, ends trimmed
  • 16 snow peas or about a handful
  • 1 clove of garlic, crushed
  • 1 tbsp olive oil
  • A pinch of salt and pepper

Tahini Dressing

  • 1 tbsp of tahini
  • 2 tbsps of fresh lemon juice
  • 1 small garlic clove, crushed
  • A pinch of salt and pepper

Directions

  1. Prepare yourself to cook with love
  2. In a mixing bowl add the asparagus, broccolini and snow peas. Add the olive oil, garlic, salt, and pepper. Mix well and then set aside
  3. Drizzle a little olive oil on both sides of the salmon and season with salt and pepper. Set aside
  4. In a small bowl add tahini, lemon juice, and garlic. Mix well. If the dressing is like a paste add a little more lemon juice so that you get a thick but runny dressing. Season with salt and pepper to taste. Set aside. 
  5. Heat a large frying pan over medium-high heat. Once it is hot add the greens and saute for 5 minutes turning often. 
  6. Add the salmon, skin side down, to the same pan and cook for 4 minutes. Meanwhile, keep turning your veggies. If they are fully cooked, remove them from the pan and add to your plate. 
  7. Flip the salmon over and cook on the other side for another 3-4 minutes. 
  8. Remove all veggies and salmon from the pan and add to a plate. Drizzle the salmon and veggies with the tahini dressing, grate a little bit of fresh lemon rind over the top. 
  9. Eat and enjoy.
