Grilled Salmon & 3 Greens with Tahini Dressing
This is a quick and easy, super tasty and oh so healthy weekday dinner. The combination of tahini and lemon juice in the dressing add a delicious freshness to this dish that is packed with vitamins and healthy fats.

Ingredients
- 160g salmon
- 5 stalks of asparagus, ends trimmed
- 10 stems of broccolini, ends trimmed
- 16 snow peas or about a handful
- 1 clove of garlic, crushed
- 1 tbsp olive oil
- A pinch of salt and pepper
Tahini Dressing
- 1 tbsp of tahini
- 2 tbsps of fresh lemon juice
- 1 small garlic clove, crushed
- A pinch of salt and pepper
Directions
- Prepare yourself to cook with love
- In a mixing bowl add the asparagus, broccolini and snow peas. Add the olive oil, garlic, salt, and pepper. Mix well and then set aside
- Drizzle a little olive oil on both sides of the salmon and season with salt and pepper. Set aside
- In a small bowl add tahini, lemon juice, and garlic. Mix well. If the dressing is like a paste add a little more lemon juice so that you get a thick but runny dressing. Season with salt and pepper to taste. Set aside.
- Heat a large frying pan over medium-high heat. Once it is hot add the greens and saute for 5 minutes turning often.
- Add the salmon, skin side down, to the same pan and cook for 4 minutes. Meanwhile, keep turning your veggies. If they are fully cooked, remove them from the pan and add to your plate.
- Flip the salmon over and cook on the other side for another 3-4 minutes.
- Remove all veggies and salmon from the pan and add to a plate. Drizzle the salmon and veggies with the tahini dressing, grate a little bit of fresh lemon rind over the top.
- Eat and enjoy.
